Maple Flavored Carrot Cake
 

Ingredients

  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon salt
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon ground nutmeg
  • 3 eggs
  • 1 cup sugar
  • ¾ cup oil
  • 8 oz. crushed, drained pineapple
  • 2½ cups shredded carrots
  • ¾ cup River's Edge maple syrup
  • 2/3 cup chopped walnuts
  • powdered sugar optional

    Instructions

    Heat oven to 350°F. Mix flour, sugar, baking soda, cinnamon, salt, allspice and nutmeg in large bowl; set aside. Beat eggs, sugar, syrup and oil until well blended. Add flour mixture; beat until blended. Stir in pineapple, carrots & walnuts. Pour into greased and floured 13 x 9 inch pan.

    Bake 45-50 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely on wire rack.

    Dust with powdered sugar or frost with maple-flavored cream cheese frosting or top with dollops of maple-flavored whipped cream. Makes 18 servings.
